Rice Paper Rolls with Rice, Fresh Ulva, Beetroot and Kohlrabi Ribbons

Ingredients

  • 1 nori seaweed sheet
  • Square rice paper
  • 70 g sushi rice
  • 30 g beetroot ribbons     
  • 25 g fresh Ulva, finely chopped
  • 25 g kohlrabi ribbons     
  • Wasabi paste

Instructions

  1. Spread the rice on the nori sheet, covering up to 3/4 of its surface, leaving the last quarter empty.
  2. Arrange the beetroot ribbons laces, Ulva, and kohlrabi ribbons parallel to each other over the rice.
  3. Apply wasabi paste on the rice, adjusting for desired spiciness.
  4. Carefully roll the nori sheet like sushi.
  5. Let sit for a few minutes.
  6. Soak the square rice paper in warm water briefly. Place on a towel and pat dry. Once softened, wrap around the sushi roll.
  7. Slice the roll diagonally in half. Serve with soy sauce or your preferred dipping sauce.
