Lightly Pickled Radishes With Ulva 

Ingredients

  • 500 g. finely chopped small radishes 
  • cup fresh Ulva
  • 1 cup white vinegar
  • ½ cup brown sugar
  • ½ tsp. salt

For an additional process: 

  • 2 tbsp. sugar                                                                                     
  • 1 tsp salt

Instructions

  1. Wash the radishes thoroughly and dry them. 
  2. With a sharp knife, cut the radishes in a criss-cross manner.
  3. Add 2 tbsp. of sugar, and 1 tsp. of salt.
  4. Mix well in a separate dish for half an hour.
  5. From time to time, stir again. The salt and sugar drain the liquid from the radishes, thus making the radishes less bitter.
  6. After half an hour, squeeze the radishes with your hands to remove the excess juice.
  7. In a separate pot, while waiting for the radishes to exude liquid, add the Ulva, vinegar, sugar, and salt and heat until the sugar melts. No need to bring to a boil.
  8. Transfer the radishes to a glass jar. Pour the Ulva and vinegar over the mixture in the jar.
  9. Place the jar in the refrigerator until the dish cools down.
