Fresh Ulva with Vegetable Roots
A refreshing combination for either summer or winter is a platter with carrots, beetroot, cucumbers, kohlrabi, and additional vegetables, depending on the season. One interesting option, which is loved by many people, is to combine Ulva with sweet roots, such as beetroot and carrots.
Ingredients
- ½ kg. fresh root vegetables, such as carrots, beetroot, or turnips.
- 2 cups fresh Ulva.
Instructions
- Slice the vegetables to bite-size servings.
- Sprinkle salt onto the vegetable and mix. The purpose of the salt is to extract water from the vegetables.
- Place the vegetables in a strainer for at least 30 minutes.
- Rinse the vegetables and dry them with a paper towel.
- Place all the vegetables in a bowl.
- Add one tsp. of sugar, three tbsp. of any kind of vinegar or lemon juice, two tbsp. of soy sauce.
- Add the fresh Ulva (cut as you wish) and mix well. Serve after 10 minutes.
